Eating Vegetarian with Blue Apron

A few months back, I began eating vegetarian, and I’m still following that eating pattern– for the most part. {More on that in a later post!} But one thing I encountered immediately was what is called the “unhealthy vegetarian.” I quickly realized that it is SO easy to eat poorly as a veggie if you don’t know what you’re doing. I poked around the internet searching for new recipes, but I was still struggling to come up with some good ideas. Truth be told, I was eating a lot of crap. Around that time, Blue Apron emailed and asked if I wanted to test out their program for this review. Perfect timing!

What is Blue Apron? In a nutshell, it is a meal delivery service that takes the guesswork out of dinner. Users can sign up for the two-person plan or the family plan and have three meals delivered to their home every week. When choosing the meals, you can select which eating style you prefer: vegetarian, seafood, chicken, etc. I was psyched to see a few veggie options on the list!

But one of my favorite parts of Blue Apron {and largely why we tried the program} is the quality of the ingredients. The ingredients come pre-measured for each recipe which is great, but more important to me is the mission of Blue Apron. The company only sources responsible seafood {rated ‘Best Choice’ or ‘Good Alternative’} and farmers that follow regenerative farming practices. Because everything comes pre-portioned, you don’t waste food if you make the recipe. Will and I have been struggling with leftover fruits and veggies spoiling in the fridge, so I appreciated the lack of waste. One more thing: Blue Apron now offers recycling for the packaging.

The Process

So how did it go?

I received three meals from the list of available meals: beet and barley risotto with swiss chard and goat cheese; roasted sweet potato and caramelized onion pizza; and rice noodles and coconut-matcha broth. Neither Will nor I loved the coconut-matcha recipe but we were surprisingly happy with the beet risotto recipe. Truth be told, we weren’t sure how we’d like that much beet in a recipe but with the goat cheese? It was so good!

Our favorite meal of the group had to be the pizza! Maybe I’ve been living in a hole but I’d never thought of putting sweet potatoes on top of a pizza. Per usual, I was a bit wary but yet again, I was pleasantly surprised. It was a tasty combo!

And truthfully, it was an easy recipe to make. The most time consuming part was prepping the ingredients, but that really just came down to dicing the onions and peeling/chopping the sweet potato; not exactly tough! I also whipped up some béchamel sauce which kinda made me feel fancy; I had never heard of that in my life! {But it tastes delightful!}

While my finished product didn’t look quite as photogenic as the Blue Apron photos, it sure tasted awesome! I always wonder how Will is going to feel about my veggie concoctions {the jury is still out on tofu!} but he loved this pizza. He asked me to save the physical paper recipe so that I can make it for dinner again; sounds like success to me.

The Details

Blue Apron is a bit more spendy than going to the grocery store yourself–BUT you make up the difference in the convenience factor. Not only do you not have to go to the grocery store {which I despise} but they also give you free shipping. If you’re a busy person, the convenience factor is huge.  Each meal costs $20 {for two people} so three meals/week for two people is $59.94. Plus, we noticed that each meal is really three servings so we always had some leftover for Will’s lunch the next day.

    I’ve never commented before, so hi! I think this is brilliant, and I would try it but it’s just a bit out of my price range! I’ve been considering going vegetarian sometime as well, and have been reading up on how to do it healthily.

    We tried it awhile back and as two non-cooks we were both thrilled with the outcome!! We actually produced a delish and beautiful dish.

    Never hear of Blue Apron before, but it sounds like a great service. Sweet potatoes on pizza does sound good… 😉

    This pizza looks delish. I have heard great things about the quality of the food from Blue Apron, although I’ve also heard that the recipes are pretty time consuming. I’d love to know how you think it compares to other home-delivery recipe kits.

    I just trialed one of these meal services (not blue apron) – I won a few days. It’s a great idea for many, but I have to admit, my husband and I love grocery shopping and price shopping, so it probably won’t be in our future. That said, I can see recommending this for many starting out on special diets. The pizza does look great!
